I’ve updated the Austin Maple Syrup Guide – removing restaurants that have closed since I last updated it in 2011 — and adding new restaurants to the list. Note: none of the restaurants that are no longer open offered maple syrup.
In early 2011, of the 53 restaurants I surveyed, 25 offered maple syrup (47%); the current list includes 63 restaurants, with 34 offering maple (54%). We’re headed in the right direction, friends!

A couple months ago, I had never heard of an ebelskiver; since then, I’ve watched them being made, eaten them, and borrowed a cookbook devoted to these round, tiny, filled treats. AEbleskivers, as they are spelled in Denmark, have really made their mark in the U.S. thanks to stores like Williams-Sonoma, that sell the pans needed to make these little guys.

Earlier this week, I wrote a post called “Reclaiming Maple,” about my love for/obsession with maple syrup. I told you about my telephone survey of about 50 Austin restaurants to learn about their syrup offerings. Since then, I’ve written two other posts — “The Rise and Fall of Maple” and “Maple Pride“.
I am saddened at how many people will tell you they serve maple when asked, “What kind of syrup do you serve with your pancakes/waffles?” By and large, these are good-hearted people who aren’t intentionally giving incorrect information.
