My mom has been making chocolate chip banana cake for as long as I can remember. If it weren’t for the brown butter sauce, this dish would be extremely healthy but pretty bland and tasteless and that butter just takes it to the next level. It’s a great way to use up vegetables if you buy too many at the store or farmer’s market (like I did) and is delicious as a leftover as well.

Sometimes I go to the grocery store, buy a bunch of vegetables, and only when I get home do I look for recipe ideas to figure out what to do with them.
