A Winter Vegetarian Meal

Chocolate Chip Banana Cake

My mom has been making chocolate chip banana cake for as long as I can remember. As I’m sitting down (ok lying down) to write this post, I think it should more accurately be called banana cake with chocolate chips, nuts and brown sugar. But chocolate chip banana cake is shorter and easier to remember and it’s always best to lead with the chocolate.

Potatoes, Green Beans, and Corn in Lemon Brown Butter Sauce

If it weren’t for the brown butter sauce, this dish would be extremely healthy but pretty bland and tasteless and that butter just takes it to the next level. It’s a great way to use up vegetables if you buy too many at the store or farmer’s market (like I did) and is delicious as a leftover as well.

Simple Weekday Recipe: Curried Cauliflower Stew

Sometimes I go to the grocery store, buy a bunch of vegetables, and only when I get home do I look for recipe ideas to figure out what to do with them.
I do not recommend this meal planning strategy. Usually what happens is I find recipes that include most of the ingredients, but it’s difficult to find a recipe where I have everything at home.
