A Winter Vegetarian Meal

I’ve been cooking at home quite a bit lately and I hope you won’t mind if I share some of the recipes I’m experimenting with here. It’s a good way to keep paperless records after all!

Almost a month ago, I decided to make a vegetarian Shabbat dinner when Adam’s cousin Julie came into town.

I was inspired by The New York Times Well’s Vegetarian Thanksgiving series to make these Honey-Roasted Acorn Squash Rings from Cooking Light. I’ve never served squash this way and my guests thought the rings were really fun too!

I turned to Twitter for the starch portion of the meal and @congressaustin, a yet to be opened restaurant downtown, offered David Bull’s recipe for Wild Mushroom Polenta. The recipe calls for lots of butter and cream and I love the addition of the marscarpone cheese and roasted mushrooms on top!

Finally, I found a simple recipe for Sauteed Broccoli Rabe from Giada De Laurentiis from The Food Network. Each ingredient enhanced the dish but nothing overshadowed the main ingredient.

I’ll be posting more recipes and at-home meals over the next few months as I have just last week recommitted myself to a healthy lifestyle (and Weight Watchers) in order to fit back into my clothes and feel better about myself. Thank you in advance for your understanding as you’ll be seeing less junk food around these parts for a while!

    These dishes changed my life. Seriously.Everything was amazing, but naturally the yummiest thing was the least healthy – creamy polenta with mushrooms!!!

    That really looks fabulous and could turn anyone vegetarian! (At least for a night!) I'll be rooting for you and then joining you in WW after mid-January. At some point, we should swap acorn squash recipes. I made it with brown sugar, sage leaves, melted butter and toasted pine nuts for Thanksgiving and it was like eating candy! That might be my new favorite vege-starch.
