New Years Treat

IMG_6324Some of the best snacks ever are the ones created after a night out on the town. For New Years Eve, Adam and I split the evening between enjoying delicious leftovers at home and hanging out downtown for First Night Austin.

We were hungry at the end of the evening but we hadn’t spent any money on New Year’s fun yet and we wanted to prove to ourselves that we could have a great night without opening our wallets. So we found ourselves at home at 1:30 a.m. with a semi-empty pantry.
crepe1Adam came up with the genius idea of making apple cinnamon “crepes.” He did this by thinly slicing an apple that he then sauteed in butter, sugar, and cinnamon. I spread fig jam on half of a whole wheat tortilla and Adam spooned the apples on top. These were then folded in half, brushed with butter, and finished off on the stove.
They were delicious! Adam was kicking himself for not adding the walnuts and brie that I had on hand to the dish but I thought it was pretty damn good for a middle of the night amuse-bouche.
During college, I would come home and make mac ‘n cheese from the blue box all the time and watch Seinfeld reruns while eating it straight from the pot (with some ketchup on the side).
