Pita Pizzas are Cute

IMG_4043This weekend I invited Katie and Rick over for a quick dinner before heading out to Hole in the Wall to see Eric rock out on the drums and make hilarious faces during a performance by his band, General Boy.

I made another one of the quick recipes adapted from the Whole Foods bulletin — Tomato Pizza. I brushed pita rounds with olive oil and crushed garlic and put in the oven for 5 minutes at 400 degrees. I topped the pita with sliced tomatoes, mixed greens, pesto, goat cheese, Parmesan, salt and pepper. I then popped it back in the oven for another 5 minutes.
Meanwhile, I had snapped the ends off fresh asparagus, drizzled them with olive oil, added salt and pepper and threw on a vegetable grilling tray with some garlic cloves on the side. I’m house/dog sitting at my friends house (hi Tania and Rob!) and had never seen a grilling device like this before. It’s very cool and I assume it’s the kind of thing you register for when you get married ;-)

This dinner took about 15 minutes to whip together from start to finish and we enjoyed it with a crisp Sauvignon Blanc that Katie brought over.
